Ingredients
- 8 cups Water
- 1/4 servings Dill Weed, Fresh
- 1 servings Raw Onion
- 3 servings Raw Celery
- 4 servings Whole Carrots
- 0 servings 8 Pc Cut Traditional Chicken, 3.0-3.5 lb.
- 1/4 teaspoons Pepper, White
Directions
NOTE: I have put 0 servings for the chicken required since it is removed after making the soup and should not be calculated in the nutrition facts.
1. Pour boiling water over the chicken. Trim off excess fat. Place in a 5 quart casserole or microsafe bowl. Cut carrots and celery in chunks. Add to chicken along with remaining ingredients and stir well. Water should come no higher than 1 1/2" from the top of the casserole to prevent boil-overs.
2. Cover and microwave on high for 30 to 35 minutes, or until soup is boiling. Stir. Simmer on 50% (medium) for 25-30 minutes.
3. Let stand covered for 15-20 minutes. Strain soup and serve chicken separately.
4. Refrigerate overnight. Fat will rise to surface and congeal. Remove fat layer and reheat.
