Black Bean Burrito Salad

Black Beans, Tomatos, Onion, Garlic, and peppers all seasoned and cooked down together and then placed over chopped lettuce and crumbled tortilla chips, topped with cheddar cheese and salsa.
Ingredients
- 85 g Romaine Lettuce
- 1/2 cup Black Beans
- 1 Tomatoes
- 1 medium White Onion
- 1 Fresh Jalepeno Pepper
- 2 Hot Chile Peppers
- 1/2 cup Sharp Cheddar Cheese
- 2 tsp Minced Garlic
- 1/2 tsp Southwest Seasoning
- 1 oz Scoops
Directions
Dice onion, peppers, and tomato and place in skillet and cook over medium heat, stirring occasionally. Drain black beans and add to pan once onions and peppers start to give up their liquid. Add minced garlic to pan and stir occasionally for about 7-10 minutes after reducing heat to medium. Chop lettuce coarsely and put into a bowl. Break up a handful of tortilla chips into the lettuce and mix with hand. Add 1/2 of cheese to bean mixture and stir to help bind together. Spoon mixture onto lettuce and tortillas. Top with additional cheese and salsa, enjoy!
