Black Bean Lime Chili W/ couscous

Ingredients
Shredded Chicken:- 2 serving Fresh Split Chicken Breasts With Ribs
- 1/2 cup Cilantro
- 2 cloves Garlic Clove
- 1/2 medium Yellow Onion
- 1/2 large bell peppe Green Bell Pepper
- 1 cup Hunt's Tomato Sauce
- 1 tbsp Adobo
- 1 cup Black Beans
- 1/4 cup Cilantro leaves
- 2 tbsp Sweet Vadalia Onion
- 1 cup Peppers, Sweet, Red
- 14 g Green Peppers
- 1/2 cup Lime Juice
- 1/2 cup Stewed Tomatoes
- 3 cups Garlic
- 3 tbsp Olive Oil
- 1 tbsp Chili Powder
Directions
Shredded Chicken: Place chicken breasts in pan with just enough water to cover. Add cilantro and garlic. Simmer for 45 minutes or until chicken is cooked and juiced run clear. Remove cooked chicken from pan, reserving liquid, cilantro and garlic, and let cool to the touch. Once cooled, remove skin from meat. Shred meat with hands or two forks. Sprinkle with Adobo and set aside.
In a food processor, pulse onion, pepper, cilantro. Add cooking liquid until mixture is smooth but not too liquidy.
Spray frying pan with cooking spray and heat to medium high. Add chicken and pepper onion mixture and mix well. Add tomoato sauce and simmer for 30 minutes or until sauce has reduced.
1)Poach Chicken and shred
2) cook cous cous as box directions, set aside
3) in deep pot heat oil on medium
4) add chopped onion, cook until soft
5) add crushed garlic, cook for an additional minute
6) add peppers and chili powder cook for one more minute
7) add beans and tomatoes with juices, bring to simmer for 5min
8) add chicken and let heat
9) add lime juice and cilantro and remove from heat
10) serve over couscous
