Black Bean Orzo Salad

Ingredients
- 15 oz Black Beans
- 2 oz Black Olives, Sliced
- 1 Medium Tomato
- 1/4 cup Green Onions
- 1/4 cup Cilantro
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp Fresh Lime Juice
- 1 tsp Ground Cumin
- 1/4 tsp Ground Black Pepper
- 1/8 tsp Salt
- 1 1/2 cups Orzo, Plain
Directions
Rinse and drain beans, drain olives, chop and seed tomato. Combine with chopped green onion and cilantro. In another bowl, combine oil, lime juice, cumin, pepper and salt. Toss with bean mixture. Stir in orzo. Let stand one hour to blend flavors and serve at room temperature.
