Black Bean & Zucchini Quesadillas (Carb Lovers Diet)

If you are making this lunch at the office (where no oven is available), just nuke this in the microwave for 1 minute instead of broiling it.
Ingredients
Salsa:- 7 servings Canned Whole Tomatos
- 1 medium Onion, Sweet
- 1 serving Sugar
- 1 serving Cilantro
- 3 clove Garlic Clove
- 1 serving Lime Juice, From Concentrate
- 2 pepper Jalapeno Pepper
- 1/2 cup Goya Black Beans
- 1/2 cup Squash - Zucchini
- 4 Corn Tortillas Taco Size
- 2 tbsp Kraft Natural Shredded Sharp Cheddar Cheese
Directions
Salsa:
1. Combine beans and salsa in a small bowl; mash with a fork. Stir in zucchini. 2. Layer 1 tortilla with half the bean mixture, sprinkle with 1 tablespoon of cheese, and top with another tortilla. Repeat with remaining tortillas, bean mixture, and cheese. 3. In broiler or toaster oven, cook quesadillas 1 minute on each side until cheese is melted and bubbly.
