No time is no excuse for not eating healthy! You can make this salad in 3 minutes (or less), says Jennifer K. Reilly, RD, who created this recipe for the Cooking with Trader Joe's Cookbook - Skinny Dish! Even though it’s quick, it’s still full of nutrition, packing in 75 percent of your daily-recommended dose of vitamin A.

INGREDIENTS

SERVES 2

  • 7 oz Butter Lettuce
  • 2 tbsp Olive Oil
  • 2 tsp Brown Rice Vinegar
  • 1/4 tsp Sea Salt

DIRECTIONS

1 Ingredients:
2 oz bag butter lettuce (or other prewashed bag of salad greens)
3 tablespoons olive oil
4 teaspoons brown rice vinegar
5 /4 teaspoon sea salt
6 Directions:
7 Place greens in a medium-sized bowl. Add remaining ingredients and toss.
8 Makes 2 servings
9 Per serving: 132 calories, 13.5g fat, 2g saturated fat, 290mg sodium, 2.5g carbohydrates, 1.5g fiber, 1g sugars, 1.5g protein
