Blueberry Muffins (Vegetarian)

From "Vegetarian Family Cookbook" by Nava Atlas Makes 12 muffins
Ingredients
- 2 cups Organic Whole Wheat Pastry Flour
- 2 tbsp Natural Raw Wheat Germ
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1/3 cup Golden Granulated Sugar
- 1 cup Natural Applesauce
- 2 tbsp Canola Oil
- 1/3 cup Skim Milk
- 1 cup Blueberries, Raw
Directions
Combine all ingredients up to Milk. Mix until well combined, but don't over mix. Fold in blueberries. Spoon batter into 12 muffin cups lined with foil cups or sprayed with nonstick coating.
Bake at 350 degrees F for approximately 20-25 minutes (until you can insert a knife and it comes out clean).
