Bob's Chk Marsala

Chicken Marsala w/lots of mushroooms
Ingredients
- 15 oz Chicken Breast
- 1 egg
- 3/4 cup Italian Style Bread Crumbs
- 1 1/2 cups Marsala Wine
- 1 1/2 cups Fat Free Chicken Broth
- 16 oz Sliced Fresh Mushrooms
Directions
Pound chicken breasts to 1/4" thickness; set aside.
Beat egg on plate, set aside.
Mix bread crumbs, basil, and Oregano in a shallow bowl; set aside.
Mix wine, Chicken Stock, chicken bouillon, pepper, Cayanne pepper, parsley, and cornstarch in a bowl; set aside.
In two nonstick skillets, cook garlic in chicken broth, oil, and butter 2 minutes on med/Low. Dip chicken in egg, coat with bread crumb mixture, then add chicken to pan, cooking 2 minutes on first side on med. Turn chicken, then add the mushrooms over the top, cover. After 3 min add wine mixture to the pan.
Cover and simmer 15 min on med/low. Spoon sauce over chicken and serve immediately over pasta.
