Bolognese

The classic Italian dish.
Ingredients
- 3 lb Ground Beef
- 1 cup Carrots
- 1 cup Celery
- 25 oz Chardonnay
- 2 cups Milk
- 8 cups Tomatoes, Crushed, Canned
- 1 cup Onions
- 1/2 tsp Nutmeg, Ground
- 1 tbsp Salt
- 10 tbsp Olive Oil
Directions
Saute the vegetables in olive oil. Add the meat and cook until brown. Add the salt, then add the bottle of wine. Simmer until the wine has completely evaporated. Add the milk and nutmeg, again simmering until it has completely evaporated. Watch the milk here - it can burn as the liquid gets low. Add the tomatoes and stir. After it simmers, turn it to the barest simmer and cook for the entire afternoon, at least 3.5 hours, preferably more. It reaches a really nice taste at about 6 hours.
