Bread Pudding Snacks (Diabetic Cooking)

Cinnamon-Rasin bread pudding cups great for fall snacks and a very low calorie too
Ingredients
- 1 1/4 cups Skim Milk, Organic
- 1/2 cup Egg Beaters Original
- 1/3 cup Granulated Sugar
- 1 tsp Pure Vanilla Extract
- 1/8 tsp Sea Salt
- 1/8 tsp Nutmeg, Ground
- 6 slices Cinnamon Rasin Bread
- 24 sprays Spray 8oz
Directions
Preheat oven to 350 degrees. Line 12 medium size muffin cups with paper baking cups.
Combine milk, egg substitute, sugar, vanilla, salt and nutmeg in medium bowl, mix well. Add bread that has been cut into 1 inch cubes. Mix well. Let stand at room temperature 15 minutes.
Spoon bread mixture evenly into prepared cups. Spray 2 sprays onto each cup. Bake 30 - 35 minutes or until snacks are puffed and golden brown. Remove to wire rack to cool completely. Snacks will puff up in the oven and fall slight ly upon coolong.
