This is a perfect breakfast for using up leftover meat from the night before. Pairing with sweet potato, Greek yogurt and sprouted-grain tortillas makes it a healthy and delicious breakfast too.

Ingredients

Directions

1. Combine sweet potatoes and taco seasoning in large nonstick skillet over medium heat. Add water.

2. Cover and cook 8 to 10 minutes or until crisp-tender and water has almost evaporated, stirring once. Stir in oil; continue cooking, uncovered, 4 to 6 minutes or until potatoes are tender and begin to brown, stirring occasionally.

3. Meanwhile, combine Greek yogurt, cilantro and hot sauce (if included) in small bowl. Set aside.
Add cooked beef to potato mixture, just to heat thru.

4. Heat a few minutes minutes or until beef is heated through, stirring occasionally, adding 1 to 2 tablespoons water, if needed to avoid sticking.

5. Add potatoes and beef to tortilla and roll up into a burrito. Top with Greek yogurt mixture.
