Pasta meets scrambled eggs in this dinner-breakfast mash up. The light, lemony, avocado sauce is bright and refreshing and tarragon (fresh or dried) is supportive for digestion.

Ingredients

Directions

1. Squeeze one lemon and place lemon juice, avocado, lemon and water in a blender, and blend until smooth, adding a pinch of salt and pepper.
2. Place the olive oil into a skillet and heat over medium heat.
3. Add the tarragon and onions, sauté for a minute or two.
4. Add the pasta and tomato. If you need to, add a small amount of water to keep the pasta from sticking too much.
5. Whisk the eggs together then add while stirring into the pan, cooking the eggs through, adding salt and pepper to taste.
6. Place onto plates and pour the avocado sauce on top.

Notes:
You can use 1 to 2 cups of cooked pasta for this recipe.
