Breakfast Pasta With Avocado Sauce

Pasta meets scrambled eggs in this dinner-breakfast mash up. The light, lemony, avocado sauce is bright and refreshing and tarragon (fresh or dried) is supportive for digestion.

INGREDIENTS

SERVES 2

  • 1 Avocado, Whole (201g)
  • 3 tbsp lemon juice
  • 1/2 cup Filtered Water
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 cup Onion
  • 1/2 cup Onions, Green, Raw
  • 1 medium raw Roma Tomato
  • 1 cup cooked fresh pasta
  • 1/2 tsp Tarragon, Dried
  • 2 large whole egg
  • 2 tbsp olive oil

DIRECTIONS

1 Squeeze one lemon and place lemon juice, avocado, lemon and water in a blender, and blend until smooth, adding a pinch of salt and pepper.
2 Place the olive oil into a skillet and heat over medium heat.
3 Add the tarragon and onions, sauté for a minute or two.
4 Add the pasta and tomato. If you need to, add a small amount of water to keep the pasta from sticking too much.
5 Whisk the eggs together then add while stirring into the pan, cooking the eggs through, adding salt and pepper to taste.
6 Place onto plates and pour the avocado sauce on top.

8 You can use 1 to 2 cups of cooked pasta for this recipe.
