Brendan's Grilled Chicken Sandwich

A marinated chicken breast grilled and then put on a whole wheat bun and drizzled with a honey mustard sauce. Marinate overnight for best results.
Ingredients
- 1 cup Purified Water
- 1/4 cup Pineapple Juice
- 1 tbsp Soy Sauce
- 1/2 tsp Salt (tata)
- 1/4 tsp Liquid Smoke
- 1/4 tsp Onion Powder
- 1 mL Garlic Powder
- 400 g Chicken Breast Filets
- 2 tbsp Dijon Mustard
- 2 tbsp Honey
- 1 tbsp Fat Free Mayo
- 1 tsp Vinegar
- 4 roll Whole Grain 100% Whole Weat Hamburger Bun
- 4 Tomatoes, Sliced
- 1 cup Shredded Lettuce
Directions
1. Prepare the chicken marinade by combining the marinade ingredients in a medium bowl. The Marinade ingredients are the:
(water, pineapple juice, soy sauce, salt, liquid smoke, onion powder, garlic powder). Add the chicken fillets, cover, and refrigerate for several hours. Overnight is even better.
2. When the chicken has marinated, cook the fillets on a preheated barbecue or indoor grill set to a high temperature for 4 to 7 minutes per side or until done.
3. While the chicken is grilling, make the fat free dressing by mixing together the dressing ingredients in a small bowl. (Dijon mustard, honey, mayo, vinegar)
4. Build each sandwich by first stacking one-quarter lettuce on the bottom hamburger bun.
5. Stack the tomato slice on the lettuce
6. Stack the Chickn Fillet on the tomato
7. Cover each sandwich with the top bun and serve with the fat-free honey mustard dressing on the side.
