Cashew Alfredo tastes like much more than the sum of its parts, and it’s a great alternative for people who want a creamy sauce free of wheat and dairy. The onion and garlic powders are what add taste and flavor to the Alfredo sauce, so don’t skip those ingredients! Steamed broccoli gives this dish a “loaded baked potato” feel and provides vitamin K, folic acid and collagen-boosting vitamin C.

1. Soak cashews in hot water for at least one hour, up to eight hours
2. Strain water from cashews and rinse them
3. In a blender, blend cashews, fresh water, and seasonings; add more water 1 tbsp at a time if needed to achieve a creamy, sauce-like consistency
4. Place fries on a platter and pour sauce over them, then top with broccoli


*This recipe uses roasted garnet sweet potato fries, which are cooked using my "base recipe":

5 cups (about 2 medium) sweet potatoes, sliced into 1/4 inch wide strips
1 1/2 tbsp algae oil
1/2 tsp salt

1. Preheat oven to 415 degrees F
2. Drizzle half the oil onto a parchment lined baking sheet
3. Lay sweet potato strips onto baking sheet in even lines
4. Drizzle salt and remainder of oil over strips
5. Roast for 35 minutes, flipping halfway through
