Broccoli and Egg Masala

This recipe is very simple and quick and better way to eat lot of broccoli. This can be Kid Friendly when you use spices in moderation. This recipe taste good with Rice, or you can wrap this in the Roti or Flat bread.

Preparation of Garam Masala:

Fry all the Cardamom, Clove, Cinnamon and Corainder seeds let them cool. Then Grind all these in a blender (I use my magic bullet small jar) and then add the dry coconut flakes at the end and grind one more time. This is called Garam Masala. Usually I do a medium batch of this powder and will keep it handy. You can use the same for Chicken Fry (Indian Style) also.

Recipe Directions:

1. Heat the oil in Non Stick Pan for 1 min, then Add the Cumin seeds
2. Once they start spluttering Add the sliced Onions (length wise and cut them in half)
3. Add the salt and stir fry for 1 min, or until the onions become translucent
4. Add the Broccoli Florets and stir fry for 2 min
5. Close the Lid and let stand for 2 min
6. Cut the Boiled eggs into Half and place them in the pan where yellow touches to the pan.
7. After 2 min turn the eggs such a way that the white part should touch the pan
9. Add the GaramMasala and turn the flame to low heat and let it stand for 2 min.
10. Gently mix (with out breaking the eggs), until Broccoli and Eggs are coated with Masala and Top it with Chopped Cilantro.

Note: You can use the Fresh Broccoli or Steamed Broccoli. If you use Steam Broccoli, First Add the Eggs to the onions and then add the Broccoli followed by GaramMasala. In that way the Broccoli does not get mushed.
