Brown Butter Gnocchi

Gnocchi
Ingredients
- 45 pieces Potato Gnocchi
- 3 tbsp Light Spread
- 2 tbsp Pine Nuts Pignoli
- 2 cloves Garlic Clove
- 2 tbsp Sundried Tomatoes
- 20 Large Pitted Black Olives
- 3 cups Spinach, Raw
- 1 tsp Salt
- 1 tsp Black Pepper
- 1/4 cup Parmesan Cheese, Original
Directions
1. Cook gnocchi according to package directions, omitting salt and fat; drain.
2. Heat butter in a large nonstick skillet over medium heat. Add pine nuts to pan; cook 3 minutes or until butter and nuts are lightly browned, stirring constantly. Add garlic to pan; cook 1 minute. Add spinach and sundried tomatoes; cook 1 minutes or until spinach wilts. Add gnocchi and olives and cook 1 minute. Stir in salt and pepper. Sprinkle with Parmesan cheese.
