Caesar-Style Kale Salad

The dressing is based on hummus, which is blended with green tea, parmesan cheese, garlic, cider vinegar, tamari, salt and pepper. It’s tangy! Recipe and image courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 6

  • 1/2 cup hummus
  • 1/4 cup Unsweetened Iced Green Tea
  • 1/4 cup Parmesan Cheese
  • 2 garlic clove
  • 2 1/2 tsp Apple Cider Vinegar
  • 1 1/2 tsp Tamari Soy Sauce
  • 1 tsp ground black pepper
  • 1/4 tsp sea salt
  • 10 oz Kales, Mixed Baby
  • 1 cup Grape Tomatoes
  • 2 tbsp sunflower seeds

DIRECTIONS

1 Make sure the green tea is chilled.
2 Add the hummus, tea, cheese, garlic, mustard, vinegar, tamari soy sauce, pepper, and salt. Cover and puree. (Makes 1 cup.)
3 When ready to serve, toss the dressing with the baby kale (or mixed baby greens) in a large serving bowl. Sprinkle with the tomatoes and sunflower seeds.
