Cajun Shrimp & Vegetables

I love shrimp, and it loves me! Shrimp is so low in fat if you just use spices instead of sauces. I can eat shrimp daily and still love it!
Ingredients
- 1 cup White Rice
- 2 tbsp Pure Olive Oil
- 1 lb shrimp
- 1 tbsp N'orleans Cajun Seasoning
- 2 clove Garlic
- 1 of Bell Pepper
- 1/4 cup Green Onions
- 1/8 tsp Salt*
- 1/8 tsp Pepper*
Directions
Preparation
Cook rice according to package directions, omitting salt and fat. I use a steamer.
While the rice cooks, heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Sprinkle the shrimp with Cajun seasoning; toss to coat. Add shrimp to pan; sauté 4 minutes or until done. Remove from pan; keep warm.
Heat 1 tablespoon oil in pan over medium-high heat. Add garlic; sauté 30 seconds. Add the pepper and green onions; sauté 3 minutes or until tender. Stir in cooked rice, shrimp, salt, and pepper, and cook 1 minute or until thoroughly heated.
