Enjoy this bowl of hearty goodness. A cross between a hearty soup and oatmeal, this recipe combines cajun-seasoned turkey, yummy sun-dried tomatoes and just enough oats to hold it all together. Recipe courtesy of Jackie Newgent, RDN.

Directions

1. Heat the oil in a medium (PFOA-free) nonstick skillet over medium. Add the turkey and Cajun seasoning and sauté until crumbled and well done, about 5 minutes.

2. Bring 1 1/4 cups water, the sun-dried tomatoes, scallion, salt, and pepper to a boil in a small saucepan.

3. Reduce heat to medium-low and stir in the oats and cooked ground turkey until the oats are fully cooked, about 5 minutes. Stir in the kale until wilted, about 1 minute.

4. Transfer to a bowl and sprinkle with desired amount of the lemon zest.

TIP: Use a salt-free cajun seasoning.

    Would make again

    I love this recipe! I quadruple it and it makes enough for the entire week. I substitute barley for the oatmeal and I add in some zucchini and fresh spinach. YUM!

  • This is absolutely not recommended for people with blood pressure and honestly the sodium intake is to high to consider it as a weight lose
