Cajun Turkey and Greens Hot Cereal Bowl

Enjoy this bowl of hearty goodness. A cross between a hearty soup and oatmeal, this recipe combines cajun-seasoned turkey, yummy sun-dried tomatoes and just enough oats to hold it all together. Recipe courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 1

  • 2 tsp extra-virgin olive oil
  • 5 oz Ground Turkey, Lean
  • 3/4 tsp Cajun Seasoning
  • 2 piece Sundried Tomatoes
  • 1 stalk scallion(s)
  • 1/4 tsp sea salt
  • 1/4 tsp Ground Black Pepper
  • 1/4 cup Rolled Oats, Old Fashioned
  • 1 cup Baby Kale
  • 1/2 tsp Grated lemon zest

DIRECTIONS

1 Heat the oil in a medium (PFOA-free) nonstick skillet over medium. Add the turkey and Cajun seasoning and sauté until crumbled and well done, about 5 minutes.
2 Bring 1 1/4 cups water, the sun-dried tomatoes, scallion, salt, and pepper to a boil in a small saucepan.
3 Reduce heat to medium-low and stir in the oats and cooked ground turkey until the oats are fully cooked, about 5 minutes. Stir in the kale until wilted, about 1 minute.
4 Transfer to a bowl and sprinkle with desired amount of the lemon zest.
5 TIP: Use a salt-free cajun seasoning.
