Canyon Ranch Orange-Pecan Cookie

A sweet, gluten-free cookie that is nut-based and full of flavor.
Ingredients
- 1/4 cup Pecans
- 2/3 cup Cane Sugar
- 2 tsp Orange Zest
- 3 large Egg White
Directions
Preheat oven to 350 degrees F. Lightly coat a baking sheet in canola oil spray.
Place pecans in a small food processer, process until oily in texture. Add pecans to a bowl, add sugar, 2 teaspoons of orange extract, and orange zest, mix by hand briefly. Add beaten egg whites slowly by hand, mix until a thin dough is formed. Chill in refrigerator for at least 2 hours.
Drop heaping teaspoonfuls on cookie sheet, placed 2 inches apart, and bake in oven for 8-10 minutes. Let cool on cookie sheet completely before removing.
