Caprese Mason Jar Salad

This simple Italian salad is a delicious low-carb, high-protein lunch. Traditionally, Caprese salad has no vinegar, but many people prefer it with the tart addition of balsamic or red-wine vinegar.

INGREDIENTS

SERVES 1

  • 1 cup Cherry Tomatoes
  • 1/3 cup Ciliegine
  • 1/4 cup Basil, fresh
  • 1 tbsp olive oil
  • 1 tbsp Balsalmic Vinegar
  • 1/2 tbsp lemon zest
  • 1/4 tsp Salt
  • 1/4 tsp Pepper, Black

DIRECTIONS

1 Mix the olive oil and balsamic vinegar with salt and pepper; pour dressing into the bottom of a Mason jar.
2 Add the cherry tomatoes then half of the shredded basil. Add the mozzarella balls, and then top with the remaining basil and lemon zest.
3 Seal until ready to eat.

5 You can substitute the balsamic vinegar with red wine vinegar.
