Carmelized Onion and Goat-Cheeese Tart

Good for a vegetarian lifestyle. But lots of cheese.
Ingredients
- 2 tbsp Butter
- 2 medium Yellow Onions
- 2 egg
- 1/4 cup Unsweetened Original
- 1/4 tsp Coarse Kosher Salt
- 1/4 tsp Cayenne Pepper
- 11 oz goat cheese
- 2 tbsp Chives
- 1 Pie Shells, Deep Dish
Directions
Prebake the shell according to package directions.
Heat oven to 325. Finely chop onion. In adequate size skillet, heat butter over med. heat. Add onion and gently cook for about 10 minutes, stirring occassionally. Set aside and let cool.
In a bowl, whisk together eggs, cream, salt, cayenne. Add the goat cheese in dollops sprinkle in the chives. Pour into prebaked shell, bake for 30 min. or until puffed and set. Let cool, cut into wedges and serve.
Note: Original recipe called for Heavy Cream not Almond Breeze. Eggs can be substituted with egg substitutes.
