Carrot Cake with cream cheese icing
Ingredients
- 1 cup Carrots
- 1 1/2 cups White Flour
- 2 tsp Baking Soda
- 1/2 tsp Garam Masala Spice
- 1/2 cup Raw Sugar
- 3/4 cup Olive Oil
- 1/2 cup Black Treacle
- 3 egg
- 1 tsp Vanilla Essence
- 250 g Fromage Blanc
- 1 cup Icing Sugar
- 1/4 cup Almonds
Directions
1. Mix flour, baking soda, nuts, garam masala
2. In another bowl, whisk together sugar, olive oil, treacle, eggs, vanilla essence
3. Pour wet ingredients into dry ingredients and mix until just combined
4. Add grated carrots and mix in
5. Pour into greased, lined cake tin and bake for 1 hour at 170 degrees C
6. Cool for 5 minutes in tin before turning out onto rack to cool
7. Mix icing sugar and fromage blanc and ice cake when cool
