Carrot Cake oatmeal

oatmeal that tastes like a bowl of carrot cake! so yum!
Ingredients
- 1/2 cup Quaker, Quaker Multigrain Oatmeal
- 1 1/2 oz Carrots, Baby, Raw
- 1 tsp Cinnamon, Ground
- 1 packet sweetens Stevia Plus
- 1 box Raisins
- 1 tbsp Flake Unsweetened Coconut
- 1 tbsp Pecan Nuts
- 2 tbsp Organic Coconut Milk Light
- 1 cup Water
- 1/4 tsp Cloves, Ground
- 1/4 tsp Ginger Powder
Directions
put 1 cup of water in a pot
add 1/2 cup of dry oats
add truvia. splenda or stevia packet along with cinnamon, clove spice and ground ginger
grate about 1/2 a carrot or 6 baby carrots in a food processor until grated.
add the grated carrot into the pot.
add 1/2 the box of raisins into the oats to "plump" them up.
add the 2 tbsp of light coconut milk to make creamier.
cook a bit longer until all the liquid is absorbed and done.
about 5-6 minutes total cooking time.
add the rest of the raisins when in bowl.
top with flaked coconut, pecans or walnuts.
