Carrot Noodles With Sesame and Soy

Carrot noodles are totally on trend. They cook wicked fast and are incredibly satisfying, but without all the carbs and heaviness of a typical pasta dish. Recipe + Image courtesy of Sherrie Castellano of With Food + Love.

INGREDIENTS

SERVES 2

  • 1 lb Whole Carrots
  • 2 tsp olive oil
  • 2 tsp tamari sauce (gluten-free)
  • 1 tsp sesame seeds

DIRECTIONS

1 Prepare the carrots into noodles by using a mandolin, julienne slicer or vegetable slicer.
2 In a sauté pan heat the olive oil. Toss the carrot noodles in the olive oil for about 1 minute. Turn up the heat and add in the tamari. Cook, while stirring for a few minutes more or until the carrots become tender.
