These crispy carrot fries will totally satisfy your salty, crunchy cravings. Carrots are a majorly underrated superfood. Coming in at only 25 calories, one medium carrot contains 204 percent of your daily value of vitamin A, which is needed for eye health.

Directions

1. Preheat oven to 400°F.
2. Slice off the carrot top and bottom, peel and cut into thin slices.
3. In a large bowl, toss carrot slices with olive oil, salt, 1/8 tsp pepper, parsley and parmesan.
4. Spread carrots on a baking sheet and bake for 15 to 20 minutes.
5. To make the dipping sauce, mix tahini, lemon juice, garlic powder and remaining pepper in a small bowl.
6. Serve dipping with warm carrot fries.
