Carrot Parmesan Fries

These crispy carrot fries will totally satisfy your salty, crunchy cravings. Carrots are a majorly underrated superfood. Coming in at only 25 calories, one medium carrot contains 204 percent of your daily value of vitamin A, which is needed for eye health.

INGREDIENTS

SERVES 6

  • 1 lb Carrots
  • 1 tbsp Olive Oil, Extra Virgin
  • 1/2 tsp Sea Salt
  • 1/2 tsp Ground Black Pepper
  • 1/4 cup Parsley, Raw Fresh
  • 1/4 cup Parmesan
  • 2 tbsp Tahini
  • 1 tbsp Lemon Juice
  • 1/2 tsp Garlic Powder

DIRECTIONS

1 Preheat oven to 400°F.
2 Slice off the carrot top and bottom, peel and cut into thin slices.
3 In a large bowl, toss carrot slices with olive oil, salt, 1/8 tsp pepper, parsley and parmesan.
4 Spread carrots on a baking sheet and bake for 15 to 20 minutes.
5 To make the dipping sauce, mix tahini, lemon juice, garlic powder and remaining pepper in a small bowl.
6 Serve dipping with warm carrot fries.
