1. Trim and clean carrots. This is a case where you really do not need to worry about peeling them. The "skin" might carry a little tartness to them, but the sweetness of this will not really matter.

So, use a food processor if you can so grating the carrots is fast and easy.

2. Put into a large bowl, twice the size of that is needed.

3. Add raisins and then Mayo. Add just a pinch of salt.

Toss and stir until the Mayo is complete integrated.Put into a seal-able container and let sit so the flavor can develop. The sugars will will develop and the raisins will plump. This is a way of using the natural sugar in the fruit to sweeten the salad.
