Cathy's Vegan Colcannon

A Irish staple food colcannon has long been a favorite in our house. Now that we're vegan we had to veganize it.
Ingredients
- 1 g potato
- 15 slices Smart Bacon
- 8 cups White Cabbage
- 1/4 cup Onions, Green, Raw
- 1 tbsp Parsley, Dried
- 1 cup Soy Milk
- 2 tbsp Margarine
- 1 cup Water
Directions

peel and boil potatoes cook until soft.
chop cabbage and bacon coarsely.
Cook cabbage with bacon, onions, and water on high heat. This will steam the cabbage somewhat.
add soymilk and margarine to the potatoes and mash.
Add the cooked cabbage mixture to the potatoes and fold together.
