Cathy's Vegan Irish Soda Bread

very raisiny irish soda bread.
Ingredients
- 1 1/2 cups Whole Wheat Flour
- 1 1/2 cups All-purpose White Flour
- 2/3 cup Sugar
- 2 tsp Baking Powder
- 1 cup Seedless Raisins
- 1 tsp Salt
- 1 3/4 cups Soy Milk (unsweetened)
- 1 3/4 tbsp White Vinegar
- 1/2 cup Silken Tofu, Soft
- 2 tbsp Vegetable Oil
Directions
mix the vinegar and soy milk and allow to curdle.
mix dry ingredients together.
mash the tofu until smooth.
add tofu to other wet ingredients and mix until smooth.
fold wet ingredients into dry ingredients. add raisins.
form into round loaf
bake on sheet pan or in casserole dish at 350 degrees for one hour.
