Catie's Low Calorie Flaxswheat Blueberry Pancakes

Easy, delicious blueberry pancakes for a girl (or guy!) on the go! Your waistline will thank you :)
Ingredients
- 1 cup Blueberries
- 1 cup 100% Organic Whole Wheat Flour
- 1 cup Skim Milk
- 1 tbsp Vanilla Extract
- 1 tbsp Baking Soda
- 3 3 Egg Whites
- 4 packet Sugar Substitute
- 3 tbsp Ground Cinnamon
- 1/2 cup Ground Flaxseed Meal
Directions
Set skillet for 325 degrees (these can also be cooked on the stove top at about a "5" setting).
Stir all liquid ingredients together in one bowl and powder ingredients in another (leave the blueberries aside, you can add these right before you pour the batter). Slowly add flour ingredients into liquid ingredients, whisking while doing so. When skillet/stove top is heated, add the blueberries to the mixture OR, as to make sure they distribute evenly, add to each pancake indiviudally. I suggest pouring pancakes out of a 1/4 measuring cup - a single batch of this batter make about 9 medium sized pancakes. Flip pancakes after about 2 minutes and cook until golden brown.
Serve with lite syrup and I Can't Believe It's Not Butter! , some fruit or light whip topping on the side and you've got yourself a low calorie, highly enjoyable meal :)
