Ingredients
- 4 cups Cauliflower,raw
- 6 1/2 oz Crimini Mushrooms
- 3 large Egg White
- 3 oz Mozzarella Cheese
- 15 g Extra Light Olive Oil Cooking Spray
Directions
Shred the cauliflower & mushroom in a food processor.
Mix with egg and cheese.
Place on oiled parchment paper
Cook at 400-450* turning once, until crisp.
I put them into 10 little rounds, and ate them w/o toppings just as a crispy snack. Like a...... cauliflower mushroom latka or something! yum. :o)
