Cauliflower Macaroni and Cheese

Ingredients
- 1/2 cup Sea Shells
- 4 cups Cauliflower Florets
- 3/4 cup Shredded Swiss Cheese
- 2 cups Milk 2%
- 2 tbsp All-purpose Flour
- 1 cup Onions
- 1 tbsp Bay Leaf
- 2 tbsp Spreadable Butter With Canola Oil
- 1 tbsp Chives
Directions
Preheat oven to 425 F.
Separate cheese.
Cook cauliflower, set aside. Cook shells al dente, set aside.
In a small saucepan, mix milk, onion, and 1 bay leaf and simmer on low.
In another saucepan, melt butter and mix in flour. Simmer on low for 1 minute.
Remove onion and bay leaf from milk mixture and combine with butter mixture. Add in half of cheese, salt/pepper, red pepper flakes, and Worcestershire sauce to taste.
Pour cauliflower and shells in baking dish. Pour in cheese mixture, and sprinkle the rest of the shredded cheese on top.
Bake for 20 minutes.
