Cauliflower Swiss Madeleine Biscuits

Cauliflower and swiss cheese low carb biscuits. Based on Maria Emmerich's Cauliflower Beignets.
Ingredients
- 2 1/2 cups Cauliflower
- 4 tbsp Butter
- 6 tbsp Flax Seed Meal
- 4 oz Swiss Cheese
- 4 egg
Directions
Shred cheese.
Cook cauliflower florets until tender. Then chop finely.
Melt butter in pan with 1 c water, bring to boil and cook 2 minutes.
Remove from heat, slowly whisk in flax seed meal until mixture thickens slightly.
Add eggs one at a time, whisking each one in completely.
Add eggs mixture to cauliflower. Mix in shredded cheese.
Allow mixture to cool to room temperature.
Spoon into madeleine pan mold.
Bake at 375F for 25 minutes.
