Chana Masala

Chana masala is a North Indian curry that can be made in less than an hour. This dish pairs equally well with naan or rice.

INGREDIENTS

SERVES 6

  • 1 tsp Vegetable Oil
  • 1 medium White Onion
  • 4 clove garlic
  • 2 Peppers, hot chili, green, raw
  • 2 tsp Tumeric
  • 2 tsp Fresh Ginger Root
  • 1 tbsp Ground Coriander Seed
  • 2 tsp Ground Cumin
  • 2 tsp Garam Masala Spice
  • 2 tsp Paprika
  • 1/4 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper
  • 4 medium whole tomato
  • 1 cup Low Sodium Vegetable Broth
  • 2 Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained solids
  • 1/4 cup Lemon Juice
  • 1/2 cup Fresh Cilantro Leaves
  • 6 pieces Sun-Dried Tomatoes

DIRECTIONS

1 Warm saucepan over medium heat. Once it’s hot, add vegetable oil. Sauté onion, garlic, chiles and turmeric. When onions turn translucent, add ginger, coriander, cumin, garam masala, paprika, salt and pepper. Mix well over heat to allow the spices to release their flavor and aromas (about 5 minutes).
2 Add diced tomatoes, mix well and simmer, covered for 15 minutes.
3 Add broth and chickpeas and simmer for 10 minutes. Add lemon juice and half minced cilantro.
4 Serve with rice or naan, or eat by itself, garnished with julienned cilantro and minced sun-dried tomatoes.
