Charlie's Veggie Soup

A basic but solid vegetable soup.
Ingredients
- 3 tbsp Pure Olive Oil
- 1 cup Onions
- 1 cup Celery
- 1 tsp Minced Garlic
- 8 serving - Tomato Sauce
- 3 oz Baby Carrots
- 1 cup Green Beans (canned)
- 2/3 cup Frozen Sweet Corn
- 2 Egg (large)
- 2 cups Rice
Directions
Heat oil.
Saute chopped onion, celery, and garlic.
Add tomato sauce.
Add chicken broth
Bring to boil
Add remaining veggies
Whisk eggs then stir in (like egg drop soup)
Add cooked rice.
Heat for at least an hour
Add extra water as soup reduces
