This satisfying bowl of stew doesn’t have to take you tons of prep time. You’ll start with a cup of “clean” premade butternut or other winter squash soup — then you’ll glam it up.

Ingredients

Directions

1. In a small saucepan, stir together spinach, soup (such as Panera at Home Autumn Squash Soup), beans, cooked rice (chilled or warm), coconut oil, lime juice, curry powder, coconut nectar (or honey), ginger and (if using) salt.
2. Place over medium-high heat and cook while stirring until mixture comes to a boil. Let boil for 1 minute. Adjust seasoning.
3. Pour into a large bowl, sprinkle with cilantro and serve.

Note:
This stew can be made in advance, stored in a sealed heat-proof container and reheated.
