Cheddar Cheesy Fries

Cheddar Cheesy Fries

The cheese sauce contains cashews, and the sweet potato is perfect for rounding out their nutty heaviness. Steaming a small amount of sweet potato and blending it with the cashews and flavorings lightens the overall sauce and adds a vibrant orange hue that more closely resembles a “real” cheese sauce.

INGREDIENTS

SERVES 4

  • 2 medium cooked sweet potato
  • 3/4 cup raw cashews
  • 2 cups Water, tap, well
  • 3/4 cup Water, tap, well
  • 1 cup Steamed Sweet Potatoes
  • 1/4 cup lemon juice
  • 2 tbsp Nutritional Yeast Seasoning
  • 2 tbsp Tamari Sauce
  • 1 tsp Tamari Sauce
  • 1 tsp Spices - Smoked Paprika
  • 1/2 tsp Turmeric
  • 1/4 tsp Pepper, Coarse Black

DIRECTIONS

1 Soak cashews in water for one hour, or up to eight hours
2 Drain cashews and rinse
3 Add all ingredients except fries into blender and blend until creamy and smooth, adding more water if needed to achieve desired texture
4 Place fries on a plate or in a bowl and pour sauce over
5 *This recipe uses roasted purple sweet potato fries, which are cooked using my "base recipe":
6 cups (about 2 medium) sweet potatoes, sliced into 1/4 inch wide strips
7 /2 tbsp algae oil
8 /2 tsp salt
9 Preheat oven to 415 degrees F
10 Drizzle half the oil onto a parchment lined baking sheet
11 Lay sweet potato strips onto baking sheet in even lines
12 Drizzle salt and remainder of oil over strips
13 Roast for 35 minutes, flipping halfway through
