A super quick, easy, cheap, quesadilla-inspired snack that is perfect for on the go!

You will fold the tortilla in half twice, sprinkling the Daiya cheese onto the tortilla before folding. The result will be a triangular-shaped pocket, with cheese in between the layers.

Pour a tiny bit of olive oil onto a nonstick pan on medium heat. Brown the tortilla in the pan on both sides, about 3 minutes per side.

That's it! Place on a plate and serve with guacamole, salsa, sliced tomatoes. Squeeze a bit of lemon juice onto the pocket for added flavor.

If desired, the pocket can be made with a number of ingredients, like black beans, chicken, tomatoes, etc. Just be sure that it is not over-stuffed.
