Cheesy bean burgers

Bean burgers made with low fat cheddar and cannellini beans.
Ingredients
- 240 g Cannellini Beans
- 25 g Nuts, Pine
- 50 g Mature Grated Cheese (be Good To Yourself)
- 1 tbsp Tomato Puree
- 20 g Onions, Spring Or Scallions
- 1 , Medium-sliced Wholemeal Bread
- 1/2 Large Egg
Directions
Lightly toast 25g pine nuts 2-3 minutes.
Mash 1 can of drained and rinsed cannellini beans then add 50g cheddar cut into small cubes, 3 cut spring onions, the pine nuts, 1/3 of breadcrumbs from a slice of bread and 1 tbsp off tomato puree. Mix well until ingredients are combined.
Shape the mixture into 4 burgers and coat the outside with freshly beaten egg. Then coat in remaining breadcrumbs and cover and chill in the fridge for 20 minutes.
Cook in fry light spray until golden on the outside 3-4 minutes.
