Cheesy High-Protein Twice-Baked Sweet Potato

You'll get tons of flavor in each bite of this sweet potato. The recipe uses two types of cheese -- cheddar and cottage cheese -- and a twice-baked method. Reach for lower-sodium cottage cheese to limit your salt intake and support good cardiovascular health.

INGREDIENTS

  • 1 sweetpotato , raw sweet potato
  • 1/2 cup non-fat cottage cheese
  • 1/2 cup Low Fat Cheddar Cheese
  • 1/2 tsp Black Pepper

DIRECTIONS

1 Preheat the oven to 400 degrees Fahrenheit.
2 Pierce the sweet potato skin using a fork, 6 to 7 times. Bake on a baking sheet for 45 to 60 minutes, until the flesh is tender.
3 Slice the potato in half, lengthwise, and use a spoon to scoop out the flesh.
4 Combine the sweet potato flesh, cottage cheese, half the cheddar cheese and black pepper in a mixing bowl.
5 Transfer the sweet potato skins to a greased casserole dish. Spoon the filling back into the potato skins, sprinkle the remaining cheddar on top of each half.
6 Bake an additional 15 to 20 minutes, until hot throughout. Serve immediately.
