A delicious vegetable dish, topped with cheese sauce and baked in the oven.

For cheese sauce: melt the butter in a saucepan, add the flour to make a rue and cook for 3 mins. Add a little of the milk and whisk, keep adding the milk slowly until all added. Add the salt, pepper, and nutmeg and whisk over a medium heat until you have a smooth, thickened white sauce. Remove from heat and add half of the cheese, whisk until smooth. Blanch the cauliflower, broccoli and carrots and place in a large pie dish. Pour over the cheese sauce and place in a preheated oven at 185 for about 30 mins. Sprinkle over the rest of the cheese and bake again for 10 mins. Delicious! to make even more delicious double the quantity of the cheese in the sauce and topping, but more calories!! Enjoy.
