Chef Ken's Whole Grain English Muffin Bread

Ingredients
- 2 1/2 cups Wheat Flour, Whole-grain
- 3/4 cup Nonfat Dry Milk Powder
- 1 1/4 cups Cracked Wheat
- 1 1/2 tsp Kosher Salt
- 1/4 tsp Baking Soda
- 1 tbsp Raw Honey
- 2 tbsp Vegetable Oil
- 1 1/2 tbsp Activedry Yeast
- 1 1/2 cups Hot Water
Directions
For bread machine: Combine dry ingredients minus ¼ cup cracked wheat and the yeast. Add oil, honey and hot water (105 °) then the dry ingredients. Make a well for the yeast and add.
Select the dough feature on your machine and press start.
In the mean time, take a crock or 1 lb. coffee can and grease it. Pour in about ¼ cup of cracked wheat and turn the crock coating on all sides with the cracked wheat.
When the dough is ready, (and your oven is 350°), place the dough, (It will be very loose and sticky), into the crock, sprinkle cracked wheat on top and bake on a cookie sheet for about 40 minutes.
