Cherry Chocolate Cake

Homemade chocolate cake with sweet cherries
Ingredients
- 1/2 cup Butter, Unsalted
- 1 1/2 cups Granulated White Sugar
- 2 100% All Natural Eggs
- 1 tsp Pure Almond Extract
- 1/2 cup Cocoa Powder
- 1 3/4 cups Cake Flour
- 1 1/4 tsp Pure Baking Soda
- 1 tsp Salt
- 15 oz Dark Sweet Cherries
Directions
1) Preheat oven to 350 degrees F. Lightly grease and flour two 9" baking pans.
2) Cream the butter with sugar until light and fluffy. Mix in the eggs and almond extract and beat well. Add the cocoa powder and mix until well combined.
3) By hand, stir the cake flour, baking soda and salt together. Add flour mixture to the butter mixture and mix until just combined.
4) Drain cherries keeping about 1/4 cup of juice. Add to batter and beat until cherries are macerated and the batter resembles a mousse.
5) Pour the batter into the prepared pans.
6) Bake at 350 degrees F for 26 to 32 minutes or until a toothpick inserted near the middle comes out clean.
After the halves cool, layer and frost with chocolate buttercream frosting.
