Chewy Vegan Apple Walnut Cake

Vegan Apple-Walnut Cake. Frickin' GOOD. Eat with some dairy-free ice cream. Top with some soy whipped cream, powdered sugar & cinnamon. This is NOT a low in calorie cake!! Savor slowly. The outer layer of this cake is a bit well done, which gives it it's "chewy". Yummmmmm!!!
Ingredients
- 24 tbsp Vegtable Oil
- 96 tsp Organic Sugar
- 91 g Organic Silken Tofu
- 1 oz Imitation Vanilla Flavor
- 3 cups Organic Whole Wheat Flour
- 1 1/2 tsp Baking Soda
- 1 tsp Sea Salt
- 1 cup Walnuts
- 484 g Gala Apples
- 6 tsp Cinnamon, Ground
Directions
• Preheat the oven to 350°F. In a large bowl, combine the oil, sugar, egg substitute or tofu, and vanilla. In a separate bowl, sift the flour, baking soda, cinnamon and salt.
• Add this to the oil-and-sugar mixture and stir by hand, approximately 200 strokes, until thoroughly mixed. Fold in the walnuts and apples. The batter will be stiff.
• Pour into a greased and floured 10-inch tube or bundt pan. Bake at 350°F for 1 hour and 15 minutes.
Serve pieces topped with Soy Whipped Cream & sprinkled with powdered sugar & cinnamon; on the side serve with some dairy-free vanilla based ice cream. So good!!
