Chicken & Black Bean Soft Tacos

Ingredients
- 1 lb Chicken Breast (boneless,skinless)
- 1 cup Whole Grain Brown Rice
- 1 cup Cooked Black Beans
- 1 cup Tomatoes Diced
Directions
Cook rice according to package directions. At the same time, boil the chicken breast until thoroughly cooked through, approx. 20 minutes. Set chicken aside to cool slightly. Shred chicken with a fork and set aside.
Cut corn off cob and add to boiling water. Boil for 3 minutes, drain, and run under cold water.
Combine chicken, rice, beans, corn, diced tomatoes, and parsley in a bowl. Divide into 8 servings. Each serving should make two soft tacos. Serve with salsa and hot sauce, if desired.
