Easy food to serve as an item in a big party (10 or more people). Requires small bowls the size of one cup to be served. The photo shows the basic ingredients for twice the quantities in the recipe, serving 30 people. As a main dish, the recipe yields about 6 servings. 1. In a large pot saute the choped onion in the ghee, at medium temperature, stirring frequently with a wood spoon (10 minutes)
2. Add the squash butternut cut in as perfect cubes as you can, and continue the saute (20 minutes) Add water if the mix is sticking to the bottom of the pot.
3. Add the canned tomato (10 minutes)
4. Add the canned corn (10 minutes)
5. Add the boiled chicken leg (or breast) cut in small cubes (15 minutes)
6. Add salt and pepper to taste.
7. Serve with cream on the side for those not very worried about his/her diet (not included in the recipe).
