Ingredients
Poached Chicken Breast:- 1 serving Chicken Breast Poached In Broth
- 1/2 cup Organic Free Range Chicken Broth
- 1 tbsp Rosemary, Fresh
- 2 tbsp Bay Leaf
- 2 tsp Thyme, Fresh
- 1 cup Baby Spinach
- 1 cup Basil, Fresh
- 10 tbsp 100% Italian Extra Virgin Olive Oil
- 2 Garlic Clove
- 1 tsp Sea Salt
- 1 tsp Ground Black Pepper
- 300 g Artisan Multigrain Bread
- 1 oz Fresh Mozzarella Cheese
- 1/2 cup Fire Roasted Red Peppers
Directions
Poached Chicken Breast: 1. Salt and pepper a chicken breast to taste
2. Place in a microwave-safe bowl with a lid
3. Mostly cover with chicken broth
4. Microwave on HIGH for 4-5 minutes
5. Microwave on Power-level 2 for 2 minutes
Chicken is done when meat thermometer reads ~160F
poach chicken with spices
mix pesto from basil, spinach, garlic, EVO, salt, pepper
slice chicken thin after cool
stack chicken, pesto, roasted red peppers, mozzarella on bread
cook in panini maker for 7 minutes.
