Chicken with Mushroom/Onion Sauce

Quick and easy chicken recipe featuring a light sauce of mushrooms and onions. Pair with potatoes or another vegetable.
Ingredients
- 16 oz Chicken Breast (boneless,skinless)
- 2 tbsp 100% Pure Cornstarch
- 1/2 cup Milk-1%
- 1 tbsp Extra Virgin Olive Oil
- 1/2 cup mushrooms, raw, sliced
- 1/2 medium Onion, Sweet
- 1 tbsp Reduced Butter
- 1/4 cup Chicken Broth
- 1/5 tsp Salt
- 1/8 tbsp Pepper, Black
Directions
- In a small bowl, combine cornstarch and milk until smooth; set aside. Flatten chicken to 1/4in. thickness. In a large non-stick skillet, cook chicken in oil over medium heat for 5-6 minutes on each side or until juices run clear. Remove and keep warm.
- In the same skillet, saute the mushrooms and onion in butter until tender. Stir in the broth, salt and pepper; bring to a boil. Stir cornstarch mixture into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken.
