Chicken and Mushrooms with couscous

Ingredients
- 1 1/2 lb Cremini Mushrooms
- 3 tbsp Extra Virgin Olive Oil
- 4 Garlic Clove
- 1/2 tsp Ground Cumin
- 1/2 tsp Ground Cinnamon
- 1 tsp Coarse Kosher Salt
- 1 tbsp Pepper, Black
- 2 1/2 lb Chicken Breast Bone In
- 1 cup Couscous
- 1 cup Chicken Broth (canned)
- 1 tbsp Lemon Juice Raw
- 1/4 cup Cilantro
Directions
1. Preheat the oven to 400 degrees. Toss the mushrooms, 2 tablespoons olive oil, the garlic, cumin, cinnimon, 1/2 teaspoon salt, and pepper to tast on a rimmed baking sheet.
2. Rub the chicken with remaining 1 tablespoon olive oil and season with salt and pepper. Arrange chicken skin side up amoung the mushrooms. Roast until chicken skin is crisp and golden and a thermometer inserted into thickest part registers 165 degrees, 25-30 minutes.
3. Meanwhile, cook couscous with chicken broth as the package directs. Season with salt and pepper.
4. Transfer the chicken to plates. Toss the mushrooms with lemon juice, cilantro, and salt and pepper to taste. Serve chicken with mushrooms, and couscous.
