Chicken Pesto Chili

White chili with pesto - from Cooking Light
Ingredients
- 2 tbsp Vegetable Oil
- 3 2/5 cups Onions
- 12 oz Chicken Breast (boneless,skinless)
- 1 1/2 cups Carrots
- 3/4 cup Red Bell Peppers
- 3/4 cup Celery
- 1/4 cup Diced Green Chilies
- 3/4 tsp Oregano
- 1/2 tsp Cumin Seed
- 1/4 tsp Salt
- 1/8 tsp Ground Black Pepper
- 1 3/4 cups Cannellini Beans, Rinsed
- 4 tsp Broth Concentrate - Chicken
- 3 tbsp Pesto
Directions
Heat oil in a Dutch oven over medium-high heat. Add onion and chicken; sauté 5 minutes. Add carrot, bell pepper, and celery; sauté 4 minutes. Add chiles and the next 6 ingredients (chiles though broth); bring to a boil.
Cover, reduce heat, and simmer 25 minutes. Stir in Pesto.
